A distinctive cheese from Southern Italy, Caciocavallo is a member of the pasta filata family of stretched-curd cheeses. Depending on the style, it can be aged anywhere from three weeks to several years, developing into a beautifully firm, semi-hard cheese with deepening flavor over time.
慢慢弄’s Caciocavallo is made with fresh milk collected daily from a premium dairy farm in northern Taiwan, recognized with the prestigious Five-Plum Award. Each wheel is carefully matured for a minimum of three weeks, allowing its naturally rich milky character to develop into a more complex, satisfying flavor.
Thanks in part to 慢慢弄’s dedication to introducing this once-obscure Italian cheese to Taiwan, Caciocavallo has become one of our most sought-after specialties. Even guests who once avoided dairy have been tempted to give it a try—and many become fans after their first bite.
