Man Mano's Ricotta is made the traditional way, without adding any mineral salts as coagulating agent. To make ricotta salata, which is commonly seen in Southern Italy like Sicilia, the fresh ricotta is pressed, salted and aged for at least 2 weeks. For the Papata version (in Italian it means "pepper added"), we put the high quality black pepper from Dutch company Vestergen. Both can be sliced or grated and served in salads, pasta etc. to replace salt and add some creaminess (and a kick of spice for ricotta pepata).
