馬斯卡彭粉紅豬排scaloppine rosa al mascarpone
 
材料(4人份)
里肌排400g、馬斯卡彭捏200g、鮮奶50ml、濃縮番茄醬一大匙、紅酒50ml、奶油30g、鹽、橄欖油、紅胡椒粒、麵粉少許
作法:
  1. 里肌排拍軟後沾麵粉,平底鍋中倒入橄欖油和奶油加熱
  2. 兩面煎到八分熟起鍋,鍋中倒入紅酒,將鍋裡deglaze
  3. 取小碗倒入一大匙番茄醬,加牛奶溶解,再倒入馬斯卡彭捏,攪勻後倒入平底鍋
  4. 用鹽胡椒調味,慢慢煮收汁,可將里肌排放回調味,撒上整顆紅胡椒粒即可
